  • Yes, they are indeed salted codfish being dried. Years ago they would be on racks called 'fish flakes'. We do not dry our salt cod. My husband salts it, making a brine so strong a potato will float in it, leaves the fish in it for a week or so, then we bag and freeze it. I really do think it is better that way--'B'Y, IT IS SUM SHOCKIN' GOOD!'as they say here in Newfoundland.
