The strip kayak handles very similar to the skin on frame kayak. The strip kayak tracks a little bit stronger and has less stability due to my center of gravity being higher. That's one thing nice about a SOF kayak, your center of gravity will be considerably lower due to the skin on the hull letting your butt sit lower.
